PORK CASSOLETTE IN A HURRY



I have been feeling rather less than my best this week and all the baking and cooking can be up hill work. Now it is entirely my own fault that the boys will not eat anything pre cooked so microwave meals are out. Not for them the ready to bake cottage pie ,even the more up market ones will not do.

Having rummaged about in the cupboards and the freezer I came up with a hasty pork cassolette quick and tasty and above all freshly cooked.

1lb diced pork rolled in seasoned flour
1 can red kidney beans
1 can butter beans
1 onion peeled and sliced
4 carrots peeled and roughly chopped
1 red apple chopped
2 chicken stock cubes
1 dessert spoon of coriander powder
1 teaspoon of ground cumin
1 teaspoon of chopped rosemary
1 dessert spoon of paprika
salt and pepper to taste

Place the pork in to the bottom of a shallow casserole dish, add the carrots then the onions .
Next pour on first the butter beans and then the red kidney beans.
Lastly scatter the chopped apple on the top.

Sprinkle;le on the spices and the crushed stock cubes, then pour on sufficient water to cover. Put on the lid or make one from foil and bake at 185oC for 90 minutes.
Check the seasoning and add the salt and pepper if needed.
Serve with crusty bread or if you are feeling energetic top with a dozen cheese scones and bake in a hot oven for a further twelve minutes to make a cobbler.


This went down a storm with the boys and they even offered to wash up afterwards............smelling salts please! Only joking.
