AVIES CHOCOLATE FUDGE CAKE




Today has been so ghastly that I really don,t wish to talk about is and so instead I shall publish my recipe for chocolate fudge cake with chocolate fudge icing and filling, a very delicious sticky and naughty treat which could cheer upeven an old grump like me, I do hope you like it.

FOR THE FUDGE CAKE
4oz butter
10 oz sugar
2 beaten eggs
6oz self raising flour
2oz cocoa powder
half teaspoon of vanilla essence
1 tablespoon of milk
pinch of salt

Grease and line two 9” sandwich tins.
Set the oven at 350oC. Melt the butter gently put the sugar into mixing bowl and pour on the melted butter mixing well. Beat in the eggs add the sifted flour,cocoa and salt and 1 tablespoon of milk then add the essence. Mix well to a stiff consistency. Pour the mixture in to the tins, smooth the tops and cook for 20 mins.
The cakes should be soft in the middle when you remove them from the oven. Leave the cakes in the tins to cool.

FOR THE FUDGE FROSTING
2oz butter
12 oz icing sugar
2 tablespoons of single cream + extra if
2 tablespoons of cocoa powder


Sift the icing sugar and the cocoa powder together
Melt the butter in a pan very gently. When just melted take off the heat and add half of the icing sugar and cocoa with the essence. Beat until smooth the add the remaining sugar mixture then beat in sufficient of the cream to give a spreading consistency.

Use a little of the frosting to sandwich the cakes together then smooth the remainder on to the top of the cake and for extra decadence decorate with white and dark chocolate shavings.

For a more grown yo version try adding two tablespoons fa coffee essence instead if the cocoa powder to the icing.
